After going through all the trouble to trim
and steam the artichoke
season it and squeeze lemon juice over the top
pluck each leaf
dipping in butter
in olive oil
in cream
using teeth to push the pulp from the leak
revealing the heart,
covered with choke
scrape it carefully with the back of a spoon
only to buy canned hearts, 10 crammed into 15 oz
No process. No joy. No delicacy.
It just feels wrong.
